Recipe: Incredible Italian Dip

A low-sugar, low-fat dip perfect for summer

Enjoy this creamy and savory dip with fresh veggies instead of chips. Low in fat and sugar, it’s a great choice for those with diabetes — or anyone who loves a healthy summertime snack.

Ingredients

Makes 6 servings (serving size 2 to 3 tablespoons)

½ cup part-skim ricotta cheese
¼ cup low-fat cottage cheese
2 tablespoons low-fat mayonnaise
2 tablespoons plain nonfat yogurt
8 sun-dried tomatoes, softened and chopped
½ teaspoon dried basil
Salt and pepper to taste

Preparation

In a food processor or blender, combine all ingredients and process until smooth.
Serve with raw vegetables or whole-grain breadsticks.
