Recipe: Creamy, Low-Fat Cucumber Yogurt Dip

This refreshing dip makes a great summer picnic side dish or appetizer. With cucumbers and yogurt, it’s a cool treat that’s good for your stomach too. You can double or triple the recipe to accommodate more people.

Ingredients

6 oz non-fat, plain Greek yogurt
1 teaspoon garlic, crushed
1 tablespoon cucumber, minced (with or without skins and/or seeds – English cucumbers work well)
½ teaspoon dried dill
1 teaspoon lemon juice
½ teaspoon olive oil
1/8 teaspoon salt
1/8 teaspoon pepper

Preparation

  1. Mix all ingredients in small bowl.
  2. Serve with raw vegetables, pita bread or rice cakes.
