Recipe: Lighter Meatloaf Seasoned With Peppers and Herbs

This meatloaf is lower in fat and full of flavor. Season it with onion, garlic, herbs, orange rind, and peppers. Try this healthier version of a family favorite, and make a great meal both parents and kids will enjoy.

Ingredients

1 pound ground beef, extra lean
ƒ½ cup (4 ounces) tomato paste
ƒ¼ cup onion, chopped
ƒ¼ cup green peppers, chopped
ƒ¼ cup red peppers, chopped
ƒ1 cup tomatoes, fresh, blanched, chopped
ƒ½ teaspoon mustard, low sodium
ƒ¼ teaspoon ground black pepper
ƒ½ teaspoon hot pepper, chopped
ƒ2 cloves garlic, chopped
ƒ2 stalks scallion, chopped
ƒ½ teaspoon ground ginger
ƒ1/8 teaspoon ground nutmeg
ƒ1 teaspoon orange rind, grated
ƒ½ teaspoon thyme, crushed
ƒ¼ cup bread crumbs, finely grated

Preparation

1. Mix all ingredients together.
2. Place in 1 pound loaf pan (preferably with drip rack) and bake uncovered at 350 degrees for 50 minutes.
3. Uncover pan and continue baking for 12 minutes. Serve and enjoy!
