Ingredients for salad

1 cup baby spring greens, chopped
2 cups romaine, chopped
1 cup red cabbage slaw
¾ cup carrot matchsticks
1 large or 2 small thinly sliced granny smith apples
1 cup mandarin oranges, packed in own juice and drained
½ cup dried cranberries
½ cup pecans
¼ cup pumpkin seeds
¼ cup gorgonzola cheese crumbles

Ingredients for dressing

4 Tbsp orange juice
1 Tbsp honey
1 Tbsp apple cider vinegar
1 tsp freshly minced ginger
1.5 Tbsp extra virgin olive oil

Directions

  1. Combine salad ingredients in a large bowl.
  2. In a separate bowl, whisk together dressing ingredients.
  3. Pour dressing into salad. Mix well. Let chill for 1 hour to let flavors combine. Serve chilled.
