Recipe: Lemony Dijon Green Beans

The secret is in the sauce

One of the ways you can make vegetables more appealing to your family is to add a sauce. Like dressing on a salad, it adds flavor and a bit of texture. Also like a salad dressing, the trick to keeping it healthy is a sauce recipe that’s flavorful, but not too high in fat.

This sauce gets its flavor from dijon mustard, which livens the green beans with a bit of tang and crunch from whole mustard seeds.

Ingredients

2 lbs fresh green beans or two 1-lb bags frozen green beans
2 tablespoons Dijon mustard
4 teaspoons lemon juice
Freshly ground black pepper to taste

Directions

  1. Cook green beans until fork tender.
  2. Mix together mustard, lemon juice, and black pepper.
  3. Pour sauce over green beans and toss. Serve.
