Recipe: Mexican-Inspired Corn Salad

Flavorful and easy to make

This Mexican-inspired corn salad is full of flavor and color. It’s seasoned with chili powder and cumin and contains cilantro and colorful peppers.

3 cups corn
2 Tbsp olive oil
1 cups minced red onion
2 tsp chili powder
1 tsp cumin
1 green bell pepper, seeded, diced
1 red bell pepper, seeded, diced
1½ cups tomatoes, seeded, diced
4 Tbsp chopped fresh cilantro
3 Tbsp cider vinegar
Salt and pepper to taste


  1. In a small sauté pan, warm olive oil over medium heat.
  2. Add onion and sauté for a few minutes.
  3. Add chili powder and cumin, and sauté for one minute longer.
  4. In a serving bowl, combine corn, bell peppers, tomatoes and cooled onions, and toss.
  5. Add cilantro and vinegar, and toss.
  6. Add salt and pepper to taste, and serve at room temperature.
