Recipe: Protein-Packed Chocolate Espresso Mousse

A tasty alternative to the dairy dessert

Don’t do dairy? Here’s a recipe for mousse that uses tofu instead of milk or cream. Tofu has no taste and easily takes on the flavor of whatever it is mixed with — which in this case is delicious chocolate. Be sure to choose silken tofu and good-quality chocolate.

12 oz. extra-firm tofu
2 ripe bananas
1 tablespoon instant espresso powder (optional)
2 oz. 70 percent cocoa bittersweet chocolate
6 tablespoon cocoa powder
1 tablespoon plus 2 teaspoons real maple syrup
2 teaspoon vanilla 


Place tofu in food processor and blend until creamy, add bananas and process until smooth.  Add espresso powder to chocolate and melt. Add to tofu along with remaining ingredients and process until smooth.  Transfer to individual dishes or a large bowl.
