Recipe: Black Bean Chili With Corn and Cilantro

Ingredients

  • 1 cup large onion, chopped
  • 3 fresh garlic cloves, chopped
  • 30 ounces canned black beans, unsalted and rinsed
  • 16 ounces fresh salsa
  • 1 cup green onion, chopped
  • 16 ounces frozen corn
  • 3/4 cup fresh cilantro, chopped

Directions

  1. Sauté onion in large non-stick saucepan over medium heat until soft and beginning to brown. Add garlic and continue cooking one minute longer.
  2. Add beans, salsa and green onions. Cover and cook over medium heat, about 10 minutes, stirring occasionally.
  3. Add corn and cook, stirring until heated.
  4. Add cilantro just before serving so that it stays green.
