Recipe: Meatless ‘Chicken’ Salad Lettuce Wraps

A fun vegetarian wrap that’s light and flavorful

meatless chicken salad lettuce wrap

Try this vegetarian ‘chicken’ salad. Garbanzo beans offer the meat substitute and Greek yogurt gives this dish a creamy consistency. Blend up with chopped celery, walnuts and sweet dried cherries, then wrap in crispy lettuce.

Ingredients

  • 1/2 cup drained and rinsed garbanzo beans
  • 1/4 cup walnuts
  • 1 rib of celery, diced
  • 2 tablespoons raisins, dried cherries, or dried cranberries
  • 1/4 cup plain Greek yogurt
  • Dash of low-sodium seasoned salt
  • 4 romaine lettuce leaves

Directions

  1. Coarsely chop the beans and walnuts.
  2. Add in remaining ingredients, except the lettuce. Serve in romaine lettuce “cups.”
