Recipe: Turkey Meatloaf With Baked Root Vegetables

This festive dish is a Thanksgiving favorite. But it doesn’t have to be November to enjoy this simple, tasty bird. It takes only 15 minutes to prep for the oven and can serve 4 people.

Ingredients

4 small carrots, diced
1 small yam, peeled and diced
1 small onion, diced
1 small beet, peeled and diced
1/2 red bell pepper, seeded and diced
1 pound organic ground turkey
1 tablespoon extra-virgin olive oil
1 teaspoon dried sage
1/2 teaspoon dried basil
1/4 teaspoon sea salt
Pinch freshly ground black pepper
Optional: 1/4 teaspoon chili pepper

Directions

  1. Preheat oven to 375ºF.
  2. In a large bowl, mix all ingredients until well combined. Place in a baking dish and cover with aluminum foil. Bake for 20 minutes, then remove the foil and continue baking for another 10 minutes to crisp vegetables.
