Recipe: Whole-Grain Cranberry Orange Muffins
Cottage cheese for protein, applesauce for oil and whole grain for heart health come together for a great breakfast.
Don’t be fooled. These are no ordinary muffins. Most muffins are low in protein and high in carbohydrates and fat, but not these tasty little numbers.

The cottage cheese increases the protein content, which makes them more satisfying. Unsweetened apple sauce replaces oil/fat and makes these muffins moist. The whole-grain makes them heart-healthy and the subtle cranberry and orange flavors make them even more delicious.
Makes a perfect breakfast or snack.
2 cups whole wheat pastry flour
¼ cup ground flaxseed
1 Tbsp baking powder
½ tsp salt
¾ cup low-fat cottage cheese
½ cup fat-free milk
1/3 cup sugar
¼ cup unsweetened apple sauce
2 tsp grated orange peel
2 egg whites
¾ cup coarsely chopped fresh or frozen cranberries
¼ cup powdered sugar (optional)
2 tsp orange juice (optional)
